Free Recipes Turkey Meatloaf: Turkey Vegetable Meatloaf

Meatloaf isn?t always made out of the traditional ground beef, it may also be produced with low fat ground turkey meat, which cuts back on the calories and the fat. Ground turkey is quite versatile and blends nicely with a variety of spices and vegetables.

This specific turkey meatloaf is full of onions, mushrooms, broccoli, carrots and green peppers. It?s held with quick cooking oats and includes seasonings such as garlic, poultry seasoning and soy sauce. This loaf may be the centerpiece of any hearty meal.

Here?s the way to create this meatloaf:

1 cup of diced yellow onion, 4 ounces of mushrooms which have been sliced, 1 cup of diced broccoli florets, 1/2 cups of diced green bell pepper, 1 cup of grated carrots, 1/4 cups of chopped fresh parsley, 1 tsp that?s been minced, 1-1/4 pounds of ground turkey, 3/4 cup of quick cooking oats, 1/4 cup of ketchup, 2 tablespoons of soy sauce, 1 large egg, lightly beaten, 1 teaspoon of poultry seasoning, 3/4 teaspoons of salt, 1/4 teaspoons of black pepper and 1 cup of canned cranberry sauce, emptied and sitting room temperature.

In a medium saucepan, cook, over moderate heat, the onions, mushrooms, broccoli, bell pepper and the carrots in salted water. Bring to a boil and then cook for an additional 2 minutes. Drain the water out of the pan. Transfer the vegetables to a large bowl.

In a big bowl, combine the cooked vegetables, parsley, garlic, ground turkey, fast cooking oats, ketchup, soy sauce, egg, poultry seasoning, salt and pepper.

Set the meatloaf mixture into the prepared pan and press down gently. Bake for 1 hour or until the loaf is firm and nice, and a light brown shade. Remove from oven and allow it to sit for as much as ten minutes.

Transfer the meatloaf into a serving platter and serve together with the cranberry sauce.
